燴豬手 (BRAISED PORK TROTTER)

Ingredients :-
1 piece roast pork (front) trotter
5-6 chestnuts, washed, soaked to soften
5-6 dry mushroom, washed, soaked to soften
2 2-inches “lengkuas“ (ginger), sliced
4 stalks coriander with roots, washed
Marinade
2 teaspoons spice powder
2 teaspoons light soy sauce
3 teaspoons dark soy sauce
1 teaspoon sugar

1. Marinade roast pork trotter, spread sliced ‘lengkuas’ and coriander roots under and top of pork. Refrigerate over night.


2. Stem for ½ hour.


3. Put in chestnuts and continue to steam for another ½ hour.


4. Put in mushrooms and steam for another 1½ hour until the meat is soft and tender.


5. Pour out gravy only and add in corn flour to thicken the gravy.


6. Once the gravy thickens, pour onto pork and serve with chopped coriander leafs.
