迷你沙丁魚蛋麵包 (EGG & SARDINE MINI BITES)

Ingredients :-
425g can sardines, drained
2 red chillies, seeded and chopped finely
3 shallots, sliced thinly
1 tablespoon lime juice
2 tablespoons mayonnaise
Salt and pepper to taste
4 sesame hot dog rolls
50g butter, softened
1 small iceberg lettuce torn into 6cm pieces
1 small cucumber, sliced thinly
2 small tomatoes, sliced thinly
3 hard-boiled eggs, sliced thinly

1. Combine sardines, chillies, shallots, lime juice and mayonnaise in a bowl. Season with salt and pepper to taste.

2. Use a scone cutter (about 6-cm diameter) to cut out bread rounds from the hot dog rolls. Slice each bread round in half to get a mini “burger” bun.

3. Spread butter thinly on one side of a bread round. Top with a piece of iceberg lettuce, and a slice each of cucumber, tomato and hard-boiled egg.

4. Spoon a teaspoon of sardine mixture over and cover with another bread round.
