烤黃薑辣味素雞 (BAKED VEGETARIAN CHICKEN WITH TURMERIC LEAF)
Ingredients :-
3 vegetarian chicken
4 blades turmeric leaf
1 tablespoon shredded turmeric leaf
Spices :
4 stalks (about 10-15g) coriander stalk
1 stem lemon grass
30g fresh galangal
20g young ginger
5 red chillies
4 blades kaffir lime leaf
½ stem ginger bud
2 tablespoons cooking oil
Seasoning :
1 tablespoon chilli sauce
½ tablespoon vegetarian oyster sauce
1 teaspoon sugar
½ tablespoon apple cider
½ teaspoon salt
1. Chop entire spices coarsely, then blend in the blender with cooking oil until fine, remove and ready to cook.
2. To make spice sauce, heat up 1 tablespoon oil, saute blended spices over a low heat until fragrant. Add in shredded turmeric leaves and seasoning, stir-fry briskly until aromatic. Dish up and leave to cool.
3. Mix spice sauce with vegetarian chicken, marinate for 30 minutes. Next, wrap with turmeric leaf. Bake in the preheated over at 180°C for 10-15 minutes. Remove from heat, cut into pieces. Serve at once.
