人車江魚仔粿 (TRISHAW IKAN BILIS RICE KUIH)

Ingredients :-
180g cooked rice (overnight)
20g enchovy (ikan bilis)
100g plain flour
35g rice flour
30g tapioca flour
½ teaspoon baking powder
160ml water
Seasoning :
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon ikan bilis stock granule

1. Soak cooked rice with water for 20 minutes, drain and set aside.

2. Combine soaked rice with the rest of ingredients and seasoning in a large bowl, stir well to resemble the mixture.  Leave aside to rest for 15 minutes.

3. In a large saucepan, heat up oil and a metal ladle.

4. Fill in some batter and press in 2 pcs enchovy in the center.  Deep fry in the hot oil over high heat for a while, then loosen the cake from ladle.  Continue deep fry until golden brown.  Remove, drain and serve.
