班蘭薯角 (DEEP-FRY PANDAN POTATO SNACKS)
Ingredietns :-
250g potatoes
1 green chilli (chopped)
1 red chilli (chopped)
80g oyster mushrooms (chopped)
1 tablespoon chopped coriander
16-20 blades pandan leaf
Seasoning :
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon bottled curry powder
½ teaspoon coriander powder
1 tablespoon tapioca flour
1. Cook potatoes in the boiling water until cooked and soften. Dish out, peeled and mash until finely paste while still hot.
2. Combine the potato paste with chopped chillies, oyster mushrooms, coriander and seasoning, mix well, keep aside.
3. Fold a blade of pandan leaf into triangle shape, stuff in some potato paste mixture, then deep-fry in the hot oil over high heat until cooked. Remove and drain well. Serve at once.
