大地四寶 (MEAT BALLS WITH POTATO AND EGGPLANTS)
Ingredients :-
200g minced pork
1 no potato
200g eggplants
½ no green capsicum (cut into triangles)
1 tablespoon chopped garlic
500ml water
Seasoning 1:
1 teaspoon light soy sauce
½ teaspoon pepper
1 tablespoon tapioca flour
1 tablespoon egg white
Seasoning 2:
½ teaspoon salt
1 teaspoon chicken stock granule
1 tablespoon sugar
1 tablespoon light soy sauce
½ teaspoon dark soy sauce
1. Peel eggplants and potatoes and cut into triangles. Next, parboil in the hot oil separately, remove and drain well.
2. Mix minced pork with seasoning 1, form the mixture into small meat balls. Deep-fry in the hot oil over high heat until cooked and golden in colour. Dish out.
3. Leave 2 tablepoon oil in the hot wok, fragrant chopped garlic, add potatoes, toss well. Pour in water and bring to the boil, then place in eggplants, meat balls and seasoning 2, simmer over a lot heat for 20 minutes until the gravy is thicken. Lastly, add capsicum, and thicken the gravy with cornstarch solutions. Dish up, serve hot.
