酒香辣味啦啦 (DRUNKEN CHILLI CLAMS)

Ingredients :-
500g clams
50g celery (sliced)
50g big onions (wedged)
2 stalks spring onion (sectioned)
8 bird's eye chillies (flatten)
10g dried shrimps
80ml "Shaoxing" wine
50ml water
Seasoning :
1 tablespoon sugar
1 tablespoon light soy sauce
1 tablespoon oyster sauce
1 teaspoon chilli powder

1. Rinse clams, then blanch in the boiling water.  Dish out and drain.

2. Heat up 2 tablespoon oil in the hot wok, to saute big onions, spring onions, bird's eye chillies and dried shrimps till fragrant.  Add in clams and toss well.

3. Pour in water and "Shaoxing" wine, bring to the boil, add seasoning and celery, stiy-fry until the gravy is almost absorbed.  Lastly, thicken with cornstarch solutions.  Dish up, serve at once.
