Ingredients :-
800g chicken
1 packet (100g) mixed Chinese herbs
1 tablespoon wolfberries
6 red dates
2 litres waterSalt to taste (optional)
1. Cut chicken into large pieces, each about the same size. Place chicken and herbs into the smaller, inner pot. Add water until ¾ full.
2. Fill half the outer port with water.
3. Place smaller pot inside. Over medium fire, bring water to a boil. Simmer for 2 hours. Check the level of water after 1 hour, adding more boiling water to outer pot. If using a slow cooker, double the cooking time and cook at high.
4. When chicken is tender - flesh comes off the bone easily - use a spoon to skim impurities off the surface of the soup. Season with salt. Serve hot.
TIP : For healthier soup, remove skin. Always use hot water for outer port.
