Ingredients :-
25-30 chicken wings
2 tablespoons fresh thyme, chopped finely
Salt and pepper to taste
Marinade
2 cups vegetable oil
2 medium yellow onions
4 spring onions
5 green chillies or jalapeno peppers
3 tablespoons fresh ginger root
6 cloves garlic
½ cup red wine vinegar
3 tablespoons light brown sugar
¼ teaspoon cinnamon
¼ teaspoon freshly ground nutmeg
2 teaspoons ground all-spice
2 tablespoons fresh lime juice
Pinch of ground cloves
1. Season the chicken with thyme, salt and pepper. Set aside.
2. Blend all the marinade ingredients in a food processor until smooth. Pour 1½ to 2 cups of marinade onto the chicken; rub well. Cover with cling wrap and refrigerate overnight.
3. Grill for about 8 to 10 mins per side or till cooked. Serve with Rainbow Salad.
