消暑茶 (HEAT CHASERS)
甘蔗馬蹄茶 (Sugar Cane & Water Chestnut Tea)
1. 600g sugar cane, washed and cut into 10-cm lengths (available from wet markets)
2. 100g cogon grass root or bai mau gen (buy from wet market)
3. 100g sugared winter melon strips
4. 20-25g water chestnuts, peeled (available at supermarket)
5. 8 bowls water (preferably water that has been boiled and left to cool for a while)
Combine ingredients in a saucepan. Simmer over a low fire for up to 3 hours. Serve warm.
珍珠薏米水 (Pearl Barley Water)
1. 50g pearl barley, washed and drained (available at supermarket)
2. 12-15 pieces sugared winter melon strips
3. 10 bowls water
4. 100g rock sugar
Combine pearly barley, winter melon strips and water in a pot. Bring to a boil and continue cooking for 45 mins. Add sugar, boil for 15 to 20 mins more. Serve warm or cool.
羅漢果 (Buddha's Fruit)
Wipe the outer shell of this dried fruit with a wet cloth, and break into halves or smaller pieces to cook into a sweet brew. Known to alleviate ulcers, boils and an over-heated body.
菊花茶 (Cyrysanthemum)
Boil these fragrant dried flowers with rock sugar to make a tea. These yellow flowers are said to reduce internal heat and soothe headaches.
綠豆沙 (Mung Beans)
Boil with rock sugar until the grains of these green beans break to make a sweet dessert. Counteracts heat in the body and is good as a detox.
珍珠薏米 (Pearl Barley)
Best boiled into a drink. When boiled, pearl or hulled barley produces a milky substance that's known to soothe sore throats and fevers.
馬蹄茶 (Water Chestnuts)
Peel off skin and eat raw or boil with sugar cane to make a sweet tea. Relieves fever and sore throat caused by internal heat.
雪耳茶 (White Fungus)
Boil with rock sugar for a drink or cock with lean meat over low fire for a delicious savoury dish. Also called snow fungus, this yin tonic ingredient alleviates heaty coughs by lubricanting the lungs.
