Ingredients :-
280g self raising flour
120g butter
110g castor sugar
100g raisins (black or golden)
2 tablespoons mixed peel
80ml evaporated creamer
1 egg
A pinch of salt
1. Preheat oven to 200°C and lightly grease baking tray.
2. Sift flour and rub butter in lightly, then mix in sugar. Add in raisins, mixed peel and mix well.
3. Beat egg, add in evaporated creamer and then mix in with flour mixture to form a stuff dough.
4. Drop small tablespoonfuls in little rough heaps on the baking tray.
5. Bake for 15 to 20 minutes.
