Calla Lily Recipes 食譜篇 - 紅燒烤肉 (CLASSIC PORK BELLY)

紅燒烤肉 (CLASSIC PORK BELLY)

Ingredients :-
600g belly pork (cut into two strips)
Seasoning A :-
1½ bulbs of garlic (leave skin on & smash)
5 small local limes (express juice)
3 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon dark soy sauce
1 tablespoon sesame oil
1 teaspoon five spice powder
4 tablespoons white granulated sugar
Dash of pepper
Seasoning B :-
1 tablespoon white granulated sugar
For garnishing :-
1 cucumber (sliced)
Some Chinese coriander
Some spring onions

1. Wash meat well, drain and add in seasoning (A).  Keep marinated for one to two hours.

2. Add seasoning (B) into pot.  Cook over low heat till sugar turns golden.  Add in no.(1) and cover, cook over medium heat for 15 minutes.  Meat should have a nice colour.

3.  Uncover, cook no.(2) till sauce appears oily and sticky.  Remove and slice.  Leave on garnished plate.
