魚翅瓜湯 (SHARKFIN MELON SOUP)

Ingredients :-
1kg sharkfin melon or yee chee kwah (cut into chunks, leave skins on)
5 mushrooms (soaked, trim off stalks)
100g raw cashew nuts
50g red dates
1 piece dried cuttlefish (soaked, cut into pieces)
50g dried oysters
500g lean meat
5 litres (5000ml) water
Seasoning :-
Salt to taste


1. Put lean meat into hot water to parboil.  Remove after 10 minutes, rinse off scums, cut into big pieces.


2. Bring water to a boil.  Add remaining ingredients except no.(1).  Boil over high heat for one hour or till melon has soften very well.


3. Add in no.(1), turn to medium heat.  Boil for 30 minutes.  Season to taste.


Note : Cashew nuts are high in protein, vitamin A and B.  It is highly nutritious but those with phlegm should not take it.
Melons are considered cooling agents but if boiled for hours, it makes a soothing drink to take during heaty days.  It can be cooked in savoury soups or boiled with dried longans, loh hon khor in sweet drinks.
