Calla Lily Recipes 食谱篇 - 蘋果菠蘿肉桂蛋糕 (APPLE, PINEAPPLE AND CINNAMON HOT CAKES)

蘋果菠蘿肉桂蛋糕 (APPLE, PINEAPPLE AND CINNAMON HOT CAKES)

Ingredients :-
200g plain flour
1 tablespoon baking powder
1 tablespoon caster sugar
1 large egg, lightly beaten
280ml milk
some butter for cooking hot cakes
2 apples, peeled and diced
¼ pineapple, diced
1 tablespoon butter
1 tablespoon caster sugar
1 teaspoon ground cinnamon
1 teaspoon nutmeg
Ice cream of your choice, and golden syrup or maple syrup for serving

1. Mix the flour, baking powder and sugar together in a bowl. Make a well in the centre and pour in the beaten egg and milk. Use a whisk to slowly incorporate flour with the egg and milk until mixture is smooth. Leave mixture to stand for ½ hour.

2. Meanwhile, cook the apple, pineapple with the butter, sugar, cinnamon and nutmeg until soft, about 4 mins. Keep warm.

3. Lightly grease a non-stick pan with butter, then spoon batter in to ladle and pour on pan. When little holes appear on the surface, flip it over and cook until golden on each side.

4. Serve with the fruits, a scoop of ice cream and drizzle with golden syrup or maple syrup.

TIP : Fruit toppings and batter can be prepared a day ahead and refrigerated. If batter is lumpy, sieve it or refine it with an electric whisk to get rid of the lumps.
