混合杏仁蛋糕 (DUNDEE CAKE)

Ingredients :-
890g mixed fruits
300g butter
6 large eggs
150g plain flour
1 1/3 teaspoon baking powder
100g blanched whole or half almond

1. Preheat oven to 150° C.

2. Cut a circle of nonstick baking paper to line the base of a 22cm round baking tin. Cut a long rectangle to line the inside. If using parchment paper, smear paper surface with butter or oil to prevent batter from sticking.

3. Chop mixed fruits finely. Wash in cold water. Drain and set aside.

4. In a mixing bowl, use an electric beater to cream butter and sugar until fluffy. Add eggs one at a time, bearing continuously.

5. Sift the two flours and baking powder together, add to butter mixture and mix. Add mixed fruits and chopped almonds.

6. Pour batter into lined baking tin. Arrange blanched almonds on top of cake batter in any pattern you like.

7. Bake for 1½ hours. Let cake cool completely. Then run a knife around the cake, inside the tin, to loosen.

8. Put baking wire stand or a plate on top. Hold in place and turn tin and plate upside down to remove cake.
