好事發財 (GOOD RETURNS ON YOUR PLATTER)

Ingredients :-
3 whole chicken legs, chopped into bite-sized pieces
2 tablespoons oil
4 slices ginger
2 cloves garlic, crushed
4 dried oysters, rinsed and soaked for 5 mins
6 dried chinese mushrooms, soaked to soften
2 stalks spring onion, sliced
½ teaspoon of black hair moss (fatt choy), soaked to soften and drained
SEASONING
1 tablespoon light soy sauce
1 tablespoon oyster sauce
1 teaspoon chinese rice wine
1 teaspoon sesame oil
1 teaspoon cornflour
¼ teaspoon pepper
½ teaspoon sugar
Thick soy sauce, for colour
SAUCE (COMBINED)
1¼ cups fresh chicken stock
1 teaspoon light soy sauce
½ teaspoon chinese rice wine
½ teaspoon sugar
¼ teaspoon salt, or to tase
¼ teaspoon pepper

1. Place chicken in mixing bowl and marinate with seasoning ingredients for about 30 mins.

2. Heat oil in a wok over medium fire and lightly brown ginger and garlic until fragrant, about a minute. Add marinated chicken, dried oysters and mushrooms. Fry for 5 mins.

3. Add combined sauce ingredients and sliced spring onion. Turn up fire and bring to a boil. Turn fire down to low and simmer, covered, for 20 mins. Add black hair moss and continue to simmer until chicken is tender and sauce is fairly thick, about 8-10 mins.

ADD-ON EXTRA : 400g sea-cucumber (rinsed and sliced into 2cm thick slices).

Instructions : Add sea-cucumber with combined sauce ingredients and sliced spring onion in Step 3.
