烘烤檸檬雞 (LEMON ROAST CHICKEN)

Ingredients :-
1.5kg whole chicken
2 tablespoons salt
2 tablespoons freshly grated black pepper
1 lemon, cut into half, plus some extra slices for serving
3 tablespoons freshly squeezed lemon juice
1 tablespoon olive oil

1. Preheat oven at 190°C.

2. Rub the chicken cavity with salt and pepper, 1 tablespoon each. Then place cut lemon into the cavity.

3. Secure chicken legs with kitchen string. Brush chicken with lemon juice, olive oil and sprinkle the remaining salt and pepper over it.

4. Place chicken in a raosting pan, cover loosely with foil and cook for 45 mins. Remove foil and continue to cook for another 20-30 mins until chicken is cooked through and golden.

5. Remove chicken from oven and allow to rest for at least 20 mins before serving.
TIP : The 20 min standing time for the cooked chicken is to ensure the juices settle and the meat does not break up when you carve the roast later.
