Calla Lily Recipes 食譜篇 - 蝦米蘑菇干貝饭 (DRIED SHRIMP, MUSHROOM AND SCALLOP RICE)


蝦米蘑菇干貝饭 (DRIED SHRIMP, MUSHROOM AND SCALLOP RICE)

Ingredients :-
40g dried shrimps, washed and drained
4 cloves garlic, chopped finely
40g chinese mushrooms, soaked till soft
40g dried scallops, washed and broken into small pieces
400g rice, washed and drained
500ml water
some coriander leaves, chopped
2 fresh chillies, chopped
some pak choy, blanched
SEASONING (COMBINED)
¼ cup water
3 tablespoons oyster sauce
1 tablespoon sesame oil
1 tablespoon sugar
½ tablespoon salt

1. Heat 2 tablespoons oil in wok over medium fire and fry dried shrimps until fragrant; push to the side. Add garlic and stir-fry until lightly brown. Toss in mushrooms and scallops. Continue to cook for another 1 min.

2. Add washed rice and seasoning. Mix well and turn off fire.

3. Pour rice mixture and water into a rice cooker. Cook rice as normal.

4. Garnish cooked rice with chopped coriander and freshly cut chillies. Serve rice with some blanched pak choy on the side.
TIP : You can subsitute white rice with brown or red rice if you want a healthier alternative.
