清蒸黑豆醬魚 (STEAMED FISH WITH TASTY BLACKBEAN SAUCE)

Ingredients :-
6 cloves garlic, chopped
10g fermented black beans
8 bird's eye chillies, chopped
500g whole garoupa fish, or any fish of your choice
SAUCE INGREDIENTS
1 tablespoon oyster sauce
1 tablespoon plum sauce
1 tablespoon rice wine, optional
1 teaspoon sugar
150ml water
GARNISHING
1 tablespoon fried crispy garlic
some coriander


1. In a pan, heat 1 tablespoon oil over medium fire and stir-fry garlic till fragrant. Add black beans and bird's eye chillies. Turn fire to high and fry for 30 secs to bring out the flavour. Add sauce ingredients and cook it for another 3o secs.

2. Steam fish over medium fire for 8-10 mins. Then pour in sauce ingredients and steam for another 3 mins or until fish is cooked.

3. Garnish fish with fried garlic and coriander. Serve hot.

TIP : The black bean sauce can be cooked in bulk and kept bottled in the fridge; use it when needed.
