桃子格蘭尼塔 (PEACH GRANITA)

Ingredients :-
3 cups water
1 cup sugar
4 peaches, peeled, stoned and chopped
Peach slices and mint leaves, to serve

1. Combine water and sugar in a saucepan on low, stirring until sugar dissolves. Bring to a boil. Simmer for 10 mins. Cool at room temperature. Place peaches and syrup in blender. Process till smooth. Strain mixture into a bowl.

2. Put sugar syrup and blended peach mixture into a shallow tray, cover properly and freeze for about 3 hours, or until mixture is just set.

3. Break up ice crystals with fork. Freeze again for 30 minutes until firm. Spoon into bowls. Top with peach slices and fresh mint leaves.

TIP : To easily peel peaches, make two small slits at the bottom of each peach, then blanch in boiling water for 15 to 30 seconds. Remove and immediately plunge peaches into cold water. The skin should come off easily when you rub it gently with your hands.
