焦糖洋蔥及醋配料 (CARAMELISED ONION AND BALSAMIC RELISH)

Ingredients :-
½ cup (80ml) olive oil
4 large (1.2kg) red onions, sliced thinly
2 cloves garlic, crushed
2 teaspoons yellow mustard seeds
½ cup (75g) firmly packed brown sugar
2/3 cup (160ml) balsamic vinegar
½ teaspoon salt

1. Heat oil in a large frying pan. Add onions and garlic; cook, covered over low heat for about 30 mins, stirring occasionally until soft.

2. Stir in mustard seeds and cook for a further 1 min.

3. Add sugar, vinegar and salt. Bring to a boil, reduce heat, simmer, uncovered, stirring occasionally, for about 15 mins, or until most of the liquid has evaporated and the onions are caramelised.

4. Spoon mixture into hot sterilised jars; seal while hot. Keep refrigerated.
