Ingredients :-
1 packet raspberry jelly
300g custard powder
1 litre cold milk
400ml whipping cream
200g raspberry
200g blackberry
200g fresh strawberry, cut into quarters
1. Prepare raspberry jelly liquid according to instructions on the packet. (Takes about 10 mins.)
2. To make custard, whisk custard powder with cold milk until smooth and well combined. Cook, stirring continuously over low fire until mixture thickens and becomes shiny (about 10 mins). Leave custard to cool.
3. Using an electric beater, whisk whipping cream until stiff. Reserve half for decorating custard later. Use a metal spoon to fold the rest of the cream into the cooled custard.
4. Spoon custard and cream mixture into base of small glasses.
5. Arrange a layer of mixed raspberries, blackberries and strawberries on top of the custard.
6. Pour sufficient jelly mixture over to cover the fruits. Leave to set for about 5 mins in fridge.
7. Repeat Steps 4 to 6 one more time, and add a finaly layer of custard. Chill in fridge for at least an hour until custard is cold.
8. Before serving, decorate with whipped cream. Dust cocoa powder over the top.
