Ingredients :-
100g Spirals Pasta, follow cooking instructuions on pack
50g butter
100g raisins
2 green apples, peeled and cubed
½ teaspoon cinnamon powder
1/8 teaspoon salt
PUDDING MIXTURE :
5 eggs, beaten
250ml dairy whipping cream
100g sugar
LEMON CURD (TOPPING) :
3 eggs
80g butter
100ml lemon juice
grated outer rind of 1 lemon
1. Mix hot pasta with butter. Add in raisins, green apple cubes, cinnamon powder, salt and mix well. Arrange pasta mixture on greased smell pudding cups.
2. Pour pudding mixture to cover the pasta mixture. Bake in a pre-heated oven at 180° C till golder brown.
3. Lemond curd : Combine all ingredients and mix well. Double boil the mixture at low heat keep stirring until thickered. Remove from heat and leave to cool.
4. Remove pudding from cup and serve hot with lemon curd.
