Ingredients :-
400g fish fillet, cut into half or into fingers
1-2 cups oil for deep-frying
100g rice flour
1 small pineapple, cut into cubes
2 fresh red chillies, shredded
100g sweet peas, blanched till just cooked
FISH MARINADE (COMBINED)
1 large egg
1teaspoon light soy sauce
1 teaspoon ginger juice
1 teaspoon rice wine, optional
½ teaspoon white ground pepper
SAUCE INGREDIENTS (COMBINED)
4 tablespoons plum sauce
2 tablespoons sweet chilli sauce
1 tablespoon rice vinegar
1 tablespoon sugar
1 teaspoon sugar
1 teaspoon salt
1 teaspoon cornstarch
1. Combine fish with the marinade for at least 15 mins.
2. Heat oil in a deep pan over medium fire. Coat marinated fish slices with rice flour and deep-fry till crisp and golden. Drain and place on a serving plate.
3. In another pan, heat 1 tablespoon oil over medium fire and pour in sauce ingredients. Bring it to a boil, and add pineapple and chillies; stir-fry for 30 secs and turn off fire.
4. Pour pineapple mixture over fish slices and serve with sweet peas.
TIP : Pour cooked sauce over fried fish just before serving, so that the fish will not be soggy. You could also subsitute the fish fillet with fried fish balls.
