星星脆饼 (STAR SHORTBREAD)
Ingredients :-
250g salted butter, room temperature
120g caster sugar
Silver cachous for decorating available in bakery stores

120g rice flour
250g plain flour
1. Cream butter with sugar until just combined. Add flour mixture and mix until a dough is formed. Lightly knead until smooth.
2. Roll out dough between 2 sheets of non-stick baking paper until it’s 1cm thick. Use a 5cm round cutter and cut into circles. Place on lightly greased baking tray.
3. Score the top of the pastry with a star cutter. Decorate it with silver cachous. Refrigerate biscuits for 30 mins or until firm.
4. Preheat oven to 160°C. Bake shortbreads for 20 to 25 mins or until light golden. Cool on tray and keep in airtight containers.
TIP : Shortbread biscuits that are made from pure butter will keep for a month in an airtight container.
