杏仁銀耳木瓜糖水 (ALMOND WHITE FUNGUS PAPAYA DESSERT)

Ingredients :-
400g ripe papaya, peeled and diced
30g white fungus, soaked for ½ hour
10g sweet almonds
10g bitter almonds
2 litres water
160g rock sugar

1. Put all the ingredients into a heavy base pot. Bring to a boil and let it simmer over low fire for 1 hour.

2. Add rock sugar and cook until it dissolves.

3. Serve hot.

TIP : This dessert soothes the throat and is good for the lungs. Another option for faster cooking is to use a pressure cooker, it will only take 20 mins.
