炸奧塔 (FRIED OTAK-OTAK)

Ingredients :-
5 tablespoons red spice paste (available at wek martkets)
2 eggs
1 tablespoon corn flour
300g mackerel or tenggiri fish fillet, cut into 2 cm pieces
100g prawns, shelled and chopped
6 kaffir lime leaves, thinly sliced
6-8 tablespoons vegetable oil

1. In a bowl, combine spice paste, eggs, corn flour and coconut milk. Mix well. Pour the mixture into a food processor. Add fish, prawns, lime leaves and sugar. Process mixture to a smooth paste.

2. Heat 2 tablespoons oil in a pan over medium fire. Brush some oil onto your hands and press 2 tablespoons fish paste into a flat parcel. Slide into the hot pan and pan-fry for 5 mins on each other or till golden brown.

3. Continue shaping and frying the fish and prawns paste in batches, adding more oil to the pan, untill all ingredients are used up. Serve hot.
