椰子冰淇淋 (COCONUT ICE CREAM)




Ingredients :-
400g evaporated milk
400g coconut milk, either fresh or box packet
2 tablespoons vanilla essence

1. Combine all ingredients in a large bowl and mix well.

2. Place bowl in the freezer for about 1 to 2 hours or until semi-frozen.

3. Remove from freezer and whisk the mixture with an electric beater until it is light and fluffy, or doubled in volume.

4. Pour mixture back into a container, cover and let it freeze (takes about ½ day).

TIPS : you can also use almond essence and ½ teaspoon ground nutmeg to give it a caribbena flavour.
