努桑塔拉蝦 (PRAWNS IN NUSANTARA STYLE)
Ingredients :-
400g large prawns
½ pineapple, cut into wedges
2 stalks lemongrass, bruised
1 star anise
1 cinnamon stick
Blended ingredients
6 fresh chillies
8 shallots
1 thumb size tumeric
6 candle nut
1 tablespoon shrimp paste
½ cup evaporated filled milk
Salt and pepper to taste
Cut limes to serve with dish
1. Heat 4 tablespoons oil. Sauté blended ingredients with lemongrass, star anise and cinnamon stick until fragrant. Add in prawns and stir-fry over high heat until prawns change in colour.
2. Add in evaporated filled milk and stir-fry mixture until gravy is thick. Season with salt and sugar to taste.
