Ingredients :-
3 cups lettuce leaves, washed, patted dry and chilled
3 cups watermelon, neatly cut into 2cm cubes
1 large (preferable seedless) guava, cut into 2cm cubes
1 small purple onion, halved lengthwise and thinly sliced
3 crabsticks (surimi), finely shredded
3 tablespoons feta cheese, lightly crumbled
2 tablespoons walnuts, lightly toasted or fried, and roughly broken into small pieces
2 tablespoons sunflower seeds, lightly toasted or fried
Dressing
3 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
Pinch of salt and freshly ground black pepper
1. Combine dressing ingredients in a small bowl. Set aside.
2. Just before serving, break lettuce up into bite-sized pieces and place in salad bowl. Top with watermelon and guava cubes, sliced onion, crabsticks and crumbled feta. Drizzle dressing over and sprinkle with nuts. Serve immediately.
