醬油炒麵 (FRIED NOODLES WITH SAUCE)
Ingredients :-
2 tablespoons vegetable oil
2 shallots, sliced
1 red chilli, sliced
1 tablespoon XO sauce (alternatively, you can use a vegetarian stir-fry sauce)
200g egg noodles
1 teaspoon light soy sauce
100g fishcake, sliced
8 button mushrooms, sliced
3 stalks chye sim
1. Heat oil in a pan and lightly fry shallots. Add chilli and XO sauce or stir-fry sauce. Cook for 30 secs.
2. Add noodles and toss well. Season with soy sauce. Add remaining ingredients. Mix well for 2 mins and serve hot.
TIPS : you can also use sliced straw mushrooms instead of button mushrooms.
