Ingredients :-
¼ cup olive oil
3 shallots, sliced
2 tablespoons brown sugar
2 tablespoons balsamic vinegar
1 sheet puff pastry, thawed
100g spinach leaves
½ cup olives
½ cup sun-dried tomatoes
100g feta cheese
1. Heat olive oil in a pan over low fire. Cook shallots for 10 mins. Stir in brown sugar and balsamic vinegar, and cook, stirring, for 5 mins. Allow to cook.
2. Preheat oven to 200°C. Lightly grease and line 2 baking trays with baking paper. Place a sheet of puff pastry onto each tray. Fold 1cm of all edges over to form a border.
3. Spread onion mix evenly between each pastry base. Toss together spinach, olives and tomatoes. Add to pastry bases. Crumble over feta cheese. Bake for 20-25 mins. Serve hot.
