金槍魚沙拉 (CRUNCHY TUNA SALAD)

Ingredients :
370g canned tuna, drained and flaked
100g spinach leaves
100g snow peas, diagonally sliced
125g beansprouts
½ cup basil leaves
½ cup mint leaves
1 carrot, cut into strips
½ peanuts, crushed
3cm ginger, cut into thin strips
Dressing (whisked well)
Juice of 2 limes
2 tablespoons ligh soy sauce
2 tablespoons peanut oil
2 tablespoons palm sugar or gula melaka
2 tablespoons sesame oil
2 red chillies, seeded and chopped
2 garlic cloves, crushed

1. In a big bowl, combine tuna, spinach, snow peas, beansprouts, basil and mint leaves, carrot, peanuts and ginger. Use two forks to toss all ingredients well.

2. Drizzle dressing over salad before serving.

TIPS : You will need about 4 cups of spinach leaves and about 2 cups of beansprouts that have been topped and tailed.
