小比薩餅 (KIDS' MINI PIZZA)
Ingredients :-
1kg plain flour
11g yeast granules
3 teaspoons salt
500ml water2 tablespoons olive oil
Topping
1 red and 1 green capcisum, diced
1 cooked chicken, cut into chunks
250g grated cheddar cheese
250g grated mozzarella cheese
1 cup tomato puree mixed with ½ cup tomato ketchup
1. In a bowl, combine plain flour with yeast granules and salt. Add water ¼ cup at a time to make a soft dough.
2. Put mixture on a lightly floured surface like granie. Knead for 15 mins until dough is not sticky. Place dough ball in bowl, cover with a cloth and leave to rise in warm place, until it doubles in size (about 1 to 1½ hours).
3. Punch dough with fist to remove air. Knead dough back into a smooth ball. Leave to rise a second time.
4. Preheat oven to 210°C. Divide dough into four portions. Sprinkle flour on a rolling pin and your work surface. Roll dough into circles, about 20cm.
5. Grease a flat baking tray with olive oil. Place dough on tray, and spread on tomato puree mixture and toppings.
6. Bake pizza in oven for 20 mins.
TIPS : If your children don't like eating greens, get them to make this pizza and choose their toppings. Studies show that kids who help prepare their own meals eat a wider variety of healthy foods, because they feel more involved.
Topping to try :
*Beef pepperoni, sliced onions, olives, grated parmesan and mozzarella cheese.
*Sliced chicken hot dogs, cubed pineapple, grated cheddar cheese.
*Minced, cooked beef or chicken with fresh basil, grated cheddar and mozzarella cheese.
*For a sweet pizza, top with sliced bananas, a swirl of brown sugar and condensed milk.
Instead of making pizza dough, use individual pitta bread, or even frozen roti canai or chapatti.
