綠豆雞湯 (MUNG BEAN SOUP WITH CHICKEN)

Ingredients :-
1 large yellow onion
300g chicken, cut into bite sized portions
100g mung beans, soaked for ½ hour
2 potatoes, diced
Salt to taste

1. Heat 2 tablespoons oil in a pot and sauté
onion until tender. Add chicken pieces and stir-fry for 1 min.

2. Pour in 1.5 litres
water, add mung beans, potatoes and bring to a boil.

3. Lower fire and simmer mixture for ½ hour or until mung beans are tender. Season with salt.

4. Serve hot.

TIP : Vegetarians can also cook this soup without the chicken. Simply add 1 tablespoon vegetarian oyster sauce as seasoning.
