Ingredients :-
500g yellow noodles, blanched & drained
200g beansprouts, blanched
3 hardboiled eggs, cut into wedges
4 slices hard beancurd, pan fry & sliced
5 fresh green chillies, chopped
Ground ingredients
3 large onions
2 slices Galangal
3cm fresh turmeric
12 dried chillies, soaked till soft
5 candlenuts
Beef stock ingredients
500g beef
1 cinnamon stick
2 star anise
1.5 litres water
1 small can tomto puree
200ml evaporated filled milk
3 medium potatoes, steamed and mashed finely
Salt and pepper to taste
1. Bring water to boil, add in sliced beef, cinnamon stick and star anise. Simmer mixture for 40 minutes or until beef is tender. Remove beef slices and keep the beef stock aside.
2. Heat 3 tablespoons of oil and fry ground ingredients until fragrant. Add fried ingredients to cook with the beef stock.
4. To serve, place some noodles, beansprouts, hardboiled eggs, beancurd slices and chillies into individual serving dish. Pour in the gravy and serve.
