特色雞飯 (SPECIAL CHICKEN RICE)
Ingredients :-
1 chicken (cleaned, buy the type meant for steaming)
3 rice bowls of rice grains (washed, drained)
4½ rice bowls of water
2 blades pandan leaves (knotted)
Seasoning A :-
1 tablespoon salt
2 tablespoons sesame oil
Seasoning B :-
1 tablespoon salt
Accompanying ingredients for rice :-
2 tablespoons cooking oil
2 tablespoons margarine
10 shallots (minced)
1 whole bulb of garlic (minced)
Small knob of old ginger (sliced)
For chilli sauce (mixed together) :-
1 plant Chinese coriander (chopped)
8 shallots (sliced, deep-fried)
1 whole bulb of garlic (minced, deep-fried)
1 tablespoon shallot oil
6 chilli paid (diced)
Some oil to taste
For garnishing :-
1 cucumber (sliced)
1 tomato (sliced)
Some Chinese coriander
1. Coat chicken with seasoning (A) for 30 minutes, glazing inside out evenly.
2. In a big pot, saute accompanying ingredients for rice. Add in rice grains to fry. Add in water and pandan leaves. Stir in seasoning (B). Leave no.(1) on the upper stacking pot (wonderway). Cook rice and chicken for 10 minutes over high heat. Lower heat to low, cook a further 10 minutes.
3. Dish rice out and serve with chopped chicken. Garnish plate, serve with chilli sauce.
