Ingredients :-
1 white skin duck (chop into 8 pieces)
10 shallots (minced)
1 whole bulb of garlic (minced)
1 tablespoon white peppercorns (crushed)
Seasoning :-
2 tablespoons sugar
½ tablespoon salt
4 tablespoons dark soy sauce
2 tablespoons assam pulp (mixed with 1 rice bowl water, discard seeds)
1. Add three spoons oil to pressure pot, saute shallots, garlic and peppercorns. Add in duck pieces and seasoning. Fry till aromatic and boiling.
2. Cover and pressure cook for half an hour. Turn off heat, wait for needle to drop before dishing up duck.
