Ingredients :-
500g white fish fillet (sliced)
50g spring onions (cut into sections)
Knob of young ginger about one inch (sliced)
½ tablespoon minced garlic
Some diced red chillies
400ml water
Marinade :-
1 teaspoon salt
½ teaspoon pepper
1 teaspoon sesame oil
2 tablespoons cornflour
Seasoning :-
1
½ tablespoons oyster sauce
1 tablespoon Chinese cooking wine
1. Coat fish slices with marinade for 20 minutes.
2. Heat wok with one rich bowl of oil. Parboil no.(1) briefly. Remove and drain-well.
3. Leave a little oil in wok. Fry garlic, young ginger slices. Meanwhile, add in no.(2) and fry well. Add in seasoning, taste and adjust.
4. Add in spring onions and red chillies. Fry well, dish up.
